
This is a GREAT spring recipe (very similar to the Fruit Pizza recipe - just a different crust but I did a better job of explaining how to mix the filling together - and thanks to my cousin Treena for the filling recipe). The recipe says to use a 12" tart pan but I used an 11" and it worked GREAT! You can really use any fruit that you want - just whatever you like and looks pretty. And if you have a hard time finding cream of coconut, I have found it on the specialty drink aisle. This would be a FABULOUS recipe for Easter. Enjoy!
