
For Ed's birthday earlier this week, I wanted to make a "healthier" cake (since Ed is a healthy eater, unlike me). So, I made him a zucchini cake - of course, if you look at what is in the cake you will see it isn't "healthy", but it did have ZUCCHINI in it. Anyway, the boys did NOT want to try it but once they did, they liked it - well, Gavin didn't but the others did. Luckily, Ed really liked it. He said it is better than carrot cake (which he loves).

I have two recipes ALL my kids LOVE (and the adults) that use cauliflower puree in them. One is a brown rice pilaf that nobody can get enough of (I have to double the recipe) and one is a creamy chicken noodle dish. They both are very healthy and my kids NEVER eat noodles with any sauce except marinara but I made them try it and now it is a staple in our house. I will send you the recipes if you want.
Cauliflower puree is SUPER easy to make if you haven't before (just steam, throw in food processor or blender with a tiny bit of water and you are done and it makes enough for several recipes). You just throw it in and the kids don't know it is there! Both recipes are from Jessica Seinfeld's newest cookbook.
I love zucchini anything so I will have to try that recipe. When I read what you cooked for dinner I thought that is a loving wife because I know none of those foods are on the top of your list (or mine) - well I guess I like the asparagus but cooked unhealthily :)
