
Here is the recipe I used for the Rolled Flank Steak I made at our Christmas Progressive Dinner. I found the recipe here at allrecipes.com. I changed it some - I didn't marinate it like the original recipe said to (when I tested this recipe, I cooked it both ways and my tasters liked it better with the red vinegrette salad dressing). I also didn't add mushrooms (because I HATE mushrooms and even the flavor of mushrooms) or red peppers (lots of the reviews said to leave out the red peppers). I added Crumbled Blue Cheese on top (MTs suggestion) which added a lot of flavor. Also, the recipe said to butterfly the flank steak. That is hard to do (flank steak is already thin). So when I bought the flank steak at Smiths (FYI - later I saw it at Costco), I talked to the butcher (who even said it was difficult for him to butterfly flank steak). He suggested that he tenderize it - which turned out GREAT! On my test run I had butterflied the flank steak - but the meat was so much more tender this way. All in all, this was a really simple dish to make and yummy. We had wanted to cook something that was a little different but not strange and this was PERFECT!
