Matthew LOVES Mexican food so we that is what we had at his Baptism. I love the sweet pork at Cafe Rio so I wanted to find a recipe at least close it. I found this one here and I LOVE it. I don't know that it is exactly like Cafe Rio but it is super yummy, definitely sweet, but so yummy! Enjoy!
