Today is Ed's birthday! He went out of town for work on Tuesday and won't be back until Saturday night - so I had to take the traditional cheesecakes and treats to work on Monday. I ended up making 4 cheesecakes, 4 dozen fancy toffee brownies, and about 10 dozen butterscotch oatmeal cookies. I'm not sure why I always make cheesecakes, they STRESS me out since it is difficult to tell if they are done or not until you cut into them. But I must say, that I was super happy with how all of them turned out!
We are sad you aren't home to celebrate today (or have a big party tomorrow night) but we will do a little something on Sunday - and maybe I will even have some sushi for you when you get home Saturday night (ha ha - I am writing like he reads this).

Carrot Cake Cheesecake
This was a layer of carrot cake, cream cheese frosting, cheesecake, more cream cheese frosting, another layer of carrot cake and more cream cheese frosting. This was a new one but I think people liked it!

Fancy Toffee Brownies
I always make these and they are always a huge hit!
Here's all the goodies together. It is still killing me that the caramel slide off that cheesecake looks horrible!
I am still working on recipes from Thanksgiving but I will add these to the list as well!
