I have made this cheesecake several times in the past 2 months and it is ALWAYS a huge hit! I took it to Ed's work for his birthday and it was hands down the favorite (shortbread cookie crust). I made it for Ed's family and they loved it (Oreo cookie crust). I also made mini ones for my ward Relief Society - I drizzled each one with some of the raspberry filling (thinned with a little water), put a mint sprig on each one and a fresh raspberry. So cute and so yummy! Enjoy!
