

I saw this recipe on Studio 5 right before Easter so I thought I would try it when we had all of Ed's family over on Easter. It is really yummy and so moist! On the show, they put toasted slices of coconut on top of the cake but I didn't have that so I put toasted sliced almonds on top. I also baked it in 2 square pans (square just for fun) but they baked theirs in one round pan (I didn't change the recipe except for baking it less - I also only made one frosting recipe and it was plenty to frost the 2-layer cake).
