
So yummy, so pretty and so easy to make! I made this for a Relief Society dinner last night - I wasn't able to stay but I had signed up to take a "rainbow" dessert (the theme was "Somewhere Over the Rainbow"). So, since it is "warming" up (no snow on the ground at our house) I thought this would be a fun dessert. The only fruit I would not normally put on a fruit pizza is the mandarin oranges - but I needed orange for my rainbow.
I got the recipe for the sugar cookie crust from my friend Nichole (thanks so much - it is super yummy and works great in a big pan). The recipe said to bake it in a cookie sheet but since I needed a pizza, I baked the cookie in a big (20") pizza pan that I lined with aluminum foil. Then for the frosting, I tried a recipe from my mom and Aunt Hazel. It was the PERFECT topping! The coconut cream was so yummy (and I am not a huge coconut fan) - it really made the dessert great!
